Weekend Treats : Chocolate Orange Cornflake Cakes.

chocolate orange cornflake cakesOk, so you probably KNOW that I love my cooking. I have been into cooking since I was a teenager which is super random but true. I sometimes do a few quick insights into recipes and what I’m cooking up on my insta-stories and I often get quite a lot of requests and interest to share recipes. So here we are.

I’ll be sharing a few of the best and my most-loved on here once in a while and we are kicking off with my ULTIMATE chocolate orange cornflake cakes.

Chocolate and orange has been a heavenly match for a long time, it’s a combination that I have invested a lot of time in (eating) and investing in (buying anything choc & orange that comes out) AND I feel we can safely say that the Cadbury’s orange twirls were a little underwhelming although I did still purchase around 30 of the things.

This dampener inspired me to make my own chocolate orange treats as there is only so many Terry’s chocolate oranges you can consume over a period and I combined my favourite afternoon tea sweet treat, the humble chocolate cornflake cake with a flash of orange. Simple, quick, possibly done hundreds of times before but for this, I didn’t look at any recipes ; I just went with my gut and it turned out pretty damn incredible.

I’ve been making cornflake cakes for years now and I’ve tried so many recipes : different chocolates, different chocolate combinations, with honey, without honey etc. This is the best (& easiest) formula I have tried!

I N G R E D I E N T S : 

Makes approx 18 servings. 10 mins to prepare. 30 minutes to cool. 457585 calories per serving.

    •  3 bars of large plain chocolate (200g size : I use x 2 milk x 1 dark – switch it up to your taste preference, plus plain branded supermarket I’ve found are best over Cadbury’s etc)
    • Cornflakes
    • Orange Essence
    • Terry’s chocolate orange (I used the mini segments, if you have the original/larget segments you may want to snap in half)
    • Terry’s chocolate orange eggs (fancy optional)

M E T H O D :

1.) Crack the plain chocolate bars into pieces and place into a microwaveable bowl. Microwave for around 1.5 > 2 minutes but keep your eye on them/ You want them semi-melted and still chunks visible by the time you take them out of the microwave as the bowl will continue to melt them with the residual heat. If the melted chocolate gets too hot it can become stiff and ruin the mix!

2.) Add the orange essence to your taste. I add 2 teaspoons.

3.) Add handfuls of cornflakes into the melted chocolate. I just keep adding and mixing until I have a really well-coated cornflake texture. the KEY is that there should be a lot of excess chocolate and it’s really gooey and dark. Almost a 1-1 ratio.

4.) Spoon the mixture into your cases OR use a baking tin like I have done if you thought you had cases and then found you didn’t. I cut small circles of baking paper for the tin to ensure they came out. The larger ones I put in my larger tin!

5.) Top with your Terry’s chocolate pieces / eggs. Push them into the mix a bit so they will set within it.

6.) Cool in the fridge for at least 30 mins. You will then be able to pop them out of the tin with a knife.

7.) Hide them from yo’ friends. Eat when they aren’t about.

They are super rich and indulgent. I have a sweet tooth and made the bigger ones as I thought these would be a good ‘greedy size’ but they are too big even for me! The smaller sizes are perfect for a chocolate hit when you are enjoying an afternoon cuppa. Me and Tom have been eating them as an evening ‘desert’ too as I made quite a big batch!

I’m just storing them in the fridge covered in cling film and I take them out of the fridge for about 20 minutes before eating although if you are an absolute psychopath you may enjoy them straight from the fridge.
