Of course it wasn’t long until this combination happened. Pretty much anything I bake, I somehow mange to shoe-horn in some chocolate orange in one way or another. For me, chocolate and orange os a dream sweet treat combination. Terry’s? Incredible? Orange crunch Quality Street? Top tier. Orange Twirls….well of course.
An age old combination that just works so well. I’ve been baking cookies for a while now and I can’t say that this recipe is anything spectacular, it’s just a basic chunky cookie recipe with loads more-than-needed chocolate thrown in in big chunks…..and of course Terry’s Chocolate orange.
They key here is to make the cookies quite big and thick so you get that real goo-ey centre and melting middle. Cold butter straight from the fridge is best for this recipe IF you have a mixer…I don’t so I simply chuck the dough in the fridge too cool before cooking and this seems to do the trick. Using a cooler dough and/or cold butter ensure you keep that thickness to the cookie.
These thick cookies are not only HUGE but the chocolate to dough ratio is not far off 50-50. Super chocolately. Amazingly indulgent.
INGREDIENTS
- 115 g unsalted butter (cold)
- 200 g brown sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 245 g plain flour
- 1 tablespoon cornflour
- 1/2 teaspoon baking soda
- Pinch of salt
- 200 grams dark and milk chocolate mixed to your taste. Chop with a knife so it’s very chunky
- 1 whole Terry’s Chocolate Orange
METHOD
- Preheat oven to 180 C + Line 2 baking trays with baking paper.
- In a mixing bowl, add the butter and sugar. Beat until combined. Add the vanilla extract and egg. Combine.
- Add flour, cornflour, baking soda and salt and mix until the dough forms.
- Hand cut up your chocolate and add into the dough, combine with hands so evenly distributed (there’s a LOT of chocolate in this mix!)
- Make the dough into large round balls and place on the oven trays, ensuring to leave room between them for when they spread out. (Around 10-12 Cookies)
- Bake cookies for 12-14 minutes until golden brown and then remove from oven and allow to cool completely. They will harden as they cool.
