Weekend Baking : Triple Chocolate Orange Goo-ey Brownies.

Of course it wasn’t long until this combination happened. Pretty much anything I bake, I somehow mange to shoe-horn in some chocolate orange in one way or another. For me, chocolate and orange os a dream sweet treat combination. Terry’s? Incredible? Orange crunch Quality Street? Top tier. Orange Twirls….well of course.

An age old combination that just works so well. I’ve been baking cookies for a while now and I can’t say that this recipe is anything spectacular, it’s just a basic chunky cookie recipe with loads more-than-needed chocolate thrown in in big chunks…..and of course Terry’s Chocolate orange.

They key here is to make the cookies quite big and thick so you get that real goo-ey centre and melting middle. Cold butter straight from the fridge is best for this recipe IF you have a mixer…I don’t so I simply chuck the dough in the fridge too cool before cooking and this seems to do the trick. Using a cooler dough and/or cold butter ensure you keep that thickness to the cookie.

These thick cookies are not only HUGE but the chocolate to dough ratio is not far off 50-50. Super chocolately. Amazingly indulgent.

INGREDIENTS

  • 115 g unsalted butter (cold)
  • 200 g brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 245 g plain flour
  • 1 tablespoon cornflour
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 200 grams dark and milk chocolate mixed to your taste. Chop with a knife so it’s very chunky
  • 1 whole Terry’s Chocolate Orange

METHOD

  1. Preheat oven to 180 C + Line 2 baking trays with baking paper.
  2. In a mixing bowl, add the butter and sugar. Beat until combined. Add the vanilla extract and egg. Combine.
  3. Add flour, cornflour, baking soda and salt and mix until the dough forms.
  4. Hand cut up your chocolate and add into the dough, combine with hands so evenly distributed (there’s a LOT of chocolate in this mix!)
  5. Make the dough into large round balls and place on the oven trays, ensuring to leave room between them for when they spread out. (Around 10-12 Cookies)
  6. Bake cookies for 12-14 minutes until golden brown and then remove from oven and allow to cool completely. They will harden as they cool.

So there we have another fun and indulgent recipe for some baking ideas! Remember to keep the dough cool so the cookies stay thick, put in more chocolate than you think you need….oh and I saved a bigger slather of Terry’s (like half a piece or 2) to stick on top of the cookie dough so when they cook and flatten our toy still can see that they have Terry’s in them. This worked on some better than others!
